Starts choose a color at random, so you cannot select a color when buying or planting one. Once you harvest a color, plant one of its pumpkins to grow more of that same color.
Get pumpkin starts
Buy pumpkin starts at Nook’s Cranny during October, or from Leif year-round, according to Nintendo’s seasonal guide. Each start reveals its pumpkin color only after it grows.
Grow starts until you find each color
Plant the starts, then wait three days for them to grow. The color is random; keep planting starts until you have harvested orange, yellow, white, and green pumpkins. The four colors and random selection are also described in the Future Press companion guide. No confirmed color odds are needed: simply plant more starts when a color is missing.
Propagate colors you already have
After harvesting a color you want more of, plant one of those pumpkins. It grows into a plant of that same color, letting you expand that variety without relying on another randomly colored start. Pumpkin plants regrow after harvest, so you can leave them in place for future crops.

Water for a larger crop
Watering affects how large the crop is, as Nintendo explains in its pumpkin-growing guide. You do not need a specific watering schedule to discover the colors; the key is planting starts and checking their harvests.

Orange pumpkins are used to craft pumpkin recipes. After crafting an item, you can use other pumpkin colors to customize its appearance. That makes it useful to keep at least one pumpkin of every color, even after you have enough plants to produce a larger harvest.
