To remove the Allay itself, damage it until it dies; it drops the items it was carrying, so collect them if you want to keep them. If you only want it to stop carrying an item, interact with it using an empty hand instead. That removes the item but leaves the Allay alive.
Remove the item or remove the Allay?
“Get rid of” can mean two different things. An empty-hand interaction takes the item from the Allay without removing the mob. Killing the Allay removes the mob, but it drops the items it was holding.
Take away what it is carrying
In Java Edition, interact with the Allay using an empty hand to remove its held item. Mojang documented this behavior in its Java Edition Snapshot 22w13a notes. The Allay remains alive.
Remove the Allay
Damage the Allay until it dies. The Allay behavior reference says that a killed Allay drops the items it holds. Pick up the drops if you want to keep them.

Does this work the same in Java and Bedrock?
The empty-hand removal instruction above is explicitly documented in Mojang’s Java Edition snapshot notes. Allay interaction details can differ between Java and Bedrock; for example, the behavior reference notes differences involving leads and name tags. Do not assume every interaction is identical across editions. Microsoft’s Bedrock Allay behavior reference provides technical implementation context, but is not a player-facing removal guide.
Is duplication a way to get rid of one?
No. Duplication creates another Allay; it does not remove the original. Mojang’s Java Edition 1.19.1 announcement describes duplication when an Allay is given an Amethyst Shard while dancing.
