Keep barbecue food out of the 40°F–140°F danger zone. Perishables may sit out for no more than two hours, or one hour when the outdoor temperature is above 90°F. Keep cold food at 40°F or below, hot food at 140°F or above, cook with a thermometer, and refrigerate leftovers promptly in shallow containers.

The barbecue time-and-temperature rules at a glance

Situation Safe limit or target
Cold food in a cooler or on a serving table 40°F or below
Hot food held for serving 140°F or above
Perishable food at ordinary outdoor temperatures Discard after more than 2 hours
Perishable food when the outdoor temperature is above 90°F Discard after more than 1 hour
Refrigerated cooked leftovers Use most within 3–4 days
Reheating leftovers 165°F throughout

The two-hour or one-hour clock includes preparation, transportation without active chilling, serving, and any time food is removed from a cooler. It applies to food taken off the grill as well as food taken out of refrigeration. If the limit is exceeded, discard the food; do not use smell, appearance, or a taste test to decide whether it is safe.

Why the 40°F–140°F range matters

USDA Food Safety and Inspection Service (FSIS) calls 40°F to 140°F the “Danger Zone.” Bacteria grow most rapidly in this range and can double in number in as little as 20 minutes. A warm afternoon, a crowded picnic table, or a cooler opened repeatedly can move food into that range faster than expected.

Keep cold salads, cut fruit, desserts containing dairy or eggs, seafood, cooked meat, and other perishables at 40°F or below until they are served. Keep cooked food at 140°F or above if it will remain out. Food that falls outside those ranges is not automatically unsafe at the instant it crosses a temperature threshold, but the elapsed-time limit still governs what you should do.

How to transport barbecue food safely

Pack a genuinely cold cooler

  1. Chill meat, poultry, seafood, salads, and other perishables in the refrigerator before packing.
  2. Fill an insulated cooler with plenty of ice or frozen gel packs. Pack food tightly so there are fewer warm air pockets.
  3. Keep the cooler in the shade and out of a hot vehicle. Do not use a cooler as a passive storage box without enough ice.
  4. Use a separate beverage cooler when possible. Frequent drink retrieval warms the food cooler and lengthens the time it is open.
  5. Open the food cooler only to remove what you will cook or serve immediately, then close it again.

Keep track of when food leaves reliable refrigeration. If ice melts, add more ice or frozen packs; do not assume that a cool-feeling container is at 40°F. A refrigerator or cooler thermometer gives you an actual reading.

Bring equipment that prevents contamination

  • A food thermometer that can measure the center of thick food.
  • Separate, clean platters for raw and cooked food.
  • Separate tongs or other utensils for raw and cooked items.
  • Clean water, soap, and paper towels, or an appropriate cleaning setup.
  • Ice or frozen packs for serving dishes, plus a way to drain meltwater and replace ice.

Serving cold food at a picnic

Keep potato, pasta, egg, seafood, and similar salads, along with cream-based desserts and cut produce, at 40°F or below until serving. Set serving dishes in ice, keep the food container surrounded by ice rather than merely placing a few cubes on top, drain meltwater as needed, and replace ice frequently.

Use small platters and replace them with fresh, refrigerated platters. Do not continually top up a dish that has been sitting out; the older layer may already have exceeded its safe time. Put out only the amount guests are likely to eat soon and return the remainder to the cooler promptly.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

If cold food has been above 40°F for more than two hours, discard it. If the outdoor temperature is above 90°F, the limit is one hour. Shade slows warming but does not extend those limits.

Holding grilled food hot

Food that will remain available after cooking should be held at 140°F or above. An insulated container, chafing dish, slow cooker, or warming tray can provide active heat. Check the food with a thermometer rather than relying on the device’s setting or on steam.

Once cooked food has been removed from the heat and is no longer maintained at 140°F or above, count its time at the table toward the two-hour limit, or the one-hour limit above 90°F. If it has been in the danger zone longer than allowed, discard it.

Safe internal temperatures for grilled food

Color and grill time are unreliable. A browned exterior can conceal an undercooked center, especially in thick burgers, chicken pieces, and roasts. Insert the thermometer into the thickest part, avoiding bone and the cooking surface, and check more than one piece when foods vary in size.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
Food Minimum internal temperature How to apply it
Beef, pork, lamb, and veal steaks, chops, and roasts 145°F Allow a 3-minute rest before cutting or serving.
Ground beef, pork, lamb, and veal 160°F Measure the center of the thickest patty or portion.
Poultry, including breasts, wings, legs, and ground poultry 165°F Check the thickest section without touching bone.
Fish and shellfish 145°F Check the thickest part of a fillet or the largest piece.
Casseroles and leftovers when reheating 165°F Measure several spots, including the center.

The 145°F requirement for whole cuts is followed by a three-minute rest. The rest is not a substitute for reaching 145°F. Ground meat has a higher target because grinding can distribute surface bacteria throughout the product.

Prevent cross-contamination before and after grilling

Keep raw food separate

Keep raw meat, poultry, and seafood refrigerated until they are ready to go on the grill. Use a separate raw-food platter and utensils. Never put cooked food on a platter that held raw food unless the platter has first been washed in hot, soapy water.

Handle marinades correctly

Marinate food in the refrigerator, not on the counter. Marinade that touched raw meat, poultry, or seafood must not be used as a finishing sauce unless you reserved a separate uncontaminated portion before marinating or thoroughly cooked the used marinade according to a tested recipe.

Wash and reset between tasks

Wash hands after touching raw food and before handling cooked food, buns, salad, or serving utensils. Clean cutting boards, knives, tongs, and counters before reusing them. Keep raw juices from dripping onto ready-to-eat foods in the cooler.

Can you partially cook meat before taking it to the grill?

Only under a specific condition: partial cooking is safe when the food goes immediately from a microwave, oven, or stove to a hot grill, where cooking is completed without a holding period. Do not partially cook meat, cool it, transport it, and finish it later. That pause can leave the interior in the danger zone while bacteria multiply.

What to do with barbecue leftovers

Start the cooling process promptly

Refrigerate leftovers as soon as possible. Divide large quantities into shallow containers so heat escapes faster; a deep pot of chili, beans, or meat cools much more slowly. Loosely cover containers while they are cooling if needed to release heat, then seal them once chilled, following your refrigerator’s instructions.

Keep the refrigerator at 40°F or below. Most cooked leftovers covered by USDA guidance should be used within 3 to 4 days when refrigerated properly. This general window does not replace food-specific instructions for unusual recipes or ingredients.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Discard leftovers that stayed out too long

If a cooked burger, chicken piece, corn dish, salad, or other perishable sat at room temperature for more than two hours, discard it. Above 90°F outdoors, discard after more than one hour. Refrigerating it later does not undo bacterial growth or toxins that may have formed.

Reheat thoroughly

Reheat leftovers to 165°F throughout. For grilled hamburgers or hot dogs, USDA advises grilling until they reach 165°F or are steaming hot when reheated. Stir foods that are heated in a microwave and check several spots because microwaves can leave cold centers. Reheat only the portion you plan to eat so the rest does not undergo repeated warming and cooling.

When a cooler, refrigerator, or serving dish warms up

Food cooler loses its chill

If you cannot verify that perishable food stayed at 40°F or below, use the elapsed-time rule. Count preparation and serving time, and discard food that has been out beyond two hours, or one hour above 90°F. Adding ice after the limit does not make the food safe again.

Refrigerator outage or door left open

If a refrigerator has been above 40°F for four hours or more, the FDA advises discarding refrigerated perishables. When the duration is uncertain, treat the food as unsafe rather than tasting it. An appliance thermometer helps establish whether food remained at or below 40°F.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Food looks or smells normal

Dangerous bacteria do not necessarily change a food’s smell, color, or texture. Never taste food to test its safety. Time and temperature records are the relevant evidence.

A practical barbecue safety checklist

  • Chill perishables before packing and use a cooler with plenty of ice or frozen gel packs.
  • Keep the food cooler shaded, closed, and separate from a frequently opened drink cooler.
  • Bring a thermometer, clean water, soap, and separate raw and cooked platters and utensils.
  • Track the moment food leaves refrigeration; preparation and serving count.
  • Cook to internal temperature: 145°F plus a 3-minute rest for whole cuts, 160°F for ground meats, 165°F for poultry, and 145°F for fish and shellfish.
  • Hold hot food at 140°F or above and cold food at 40°F or below.
  • Replace small serving platters instead of adding fresh food to an old, warm layer.
  • Refrigerate leftovers promptly in shallow containers and use most within 3–4 days.
  • Reheat leftovers to 165°F.
  • When the time or temperature limit has been exceeded, throw the food away.

Common barbecue scenarios and the correct decision

Scenario Decision Reason
Potato salad sat on a shaded table for 90 minutes on an 85°F day Return it to refrigeration promptly if it stayed within the two-hour limit; otherwise discard. Shade does not stop warming, and the ordinary limit is two hours.
Burgers were cooked, placed on a clean platter, and held in a warming tray at 145°F Continue serving while the tray maintains at least 140°F. Active hot holding keeps the food above the danger zone.
Raw-chicken tongs were used to move cooked chicken Stop serving with those tongs; wash them in hot, soapy water or replace them. Raw juices can contaminate cooked food.
Partially cooked ribs were transported for an hour before grilling Discard them. Partial cooking is safe only when followed immediately by grilling.
Leftover steak was refrigerated in a deep pot overnight Transfer to shallow containers for future cooling; use within 3–4 days if it was refrigerated promptly and safely. Shallow portions cool faster and reduce time in the danger zone.
