For regular Gorn Hostiles in Star Trek Fleet Command, Scopely’s published baseline is the Gorn Eviscerator with Kathryn Janeway as captain, plus Enterprise-E Picard and Enterprise-E Data. The key requirement is Isolytic Damage: Gorn Hunters are immune to non-Isolytic damage, so a lineup or ship build that cannot deal it will not defeat them.
Official STFC Gorn crew and ship
Scopely’s PvE guide lists this lineup under “Vs Gorn Hostiles,” with the Gorn Eviscerator as the preferred ship:

The same guide also lists WOK Saavik and SNW Nurse Chapel, but does not specify when to substitute either officer. It gives no head-to-head ranking by officer rank, ship tier, or player level, so treat the Janeway–Picard–Data lineup as the official starting point—not a proven universal optimum. Why Isolytic Damage is essential
Gorn Hunter encounters have a specific damage gate. In its April 9, 2024 Update 65 notes, the Star Trek Fleet Command team says: “These Gorn Hunter Hostiles deal Isolytic damage and are immune to all non-Isolytic sources of damage, resulting in great rewards.” The Help Center likewise says Gorn Hunters can only be taken down using Isolytic Damage. That means the first crew-building check is not simply whether officers improve general hostile damage: make sure your ship and setup can deal Isolytic Damage. The Gorn Eviscerator is purpose-built for this fight, but Scopely’s description does not establish that every account must use it or that another Isolytic-capable setup is equivalent.
When to use SNW Nurse Chapel
Chapel is a listed alternative with two distinct support effects in Update 65: her Officer Ability, Archaeological Medicine, increases loot from Gorn Hunter Hostiles, while her Below Deck ability increases Isolytic Damage against hostiles. The effect values depend on her upgrade level, so the patch-note maximum should not be assumed for every account. Scopely does not specify a rank or matchup at which she should replace Janeway, Picard, or Data.

Use the published lineup as the baseline when you want the explicitly named Gorn combat crew; consider Chapel when her loot or below-deck Isolytic support fits your build. The official material does not quantify the trade-off between that support and the listed bridge officers.
What the Gorn Eviscerator adds
Update 66 describes two Gorn-relevant abilities on the Eviscerator:

- Hunt the Hunters increases Isolytic Damage against Gorn Hunters.
- Rigorous Extraction amplifies Apex Isomatter when you defeat a Gorn Hunter while using the ship.
Scopely also says that tiering the Eviscerator increases its Isolytic damage. These bonuses make it the most directly supported ship choice for this activity, though the guide does not compare it numerically with other ships. Update 66 further describes Pelia as providing Isolytic-hostile combat boosts and says she can pair with Sam/SNW James Kirk, M’Benga, or Chapel; that is general synergy guidance, not a replacement for the specific Gorn lineup in the PvE guide. Regular Gorn Hostiles and V’ger Gorn Hunters are not interchangeable
Do not automatically carry the regular Gorn crew recommendation into every V’ger encounter. Update 86 lists V’ger Gorn Hunters in the weekly challenge schedule on Tuesdays, Thursdays, and Sundays, and says they also take only Isolytic Damage. Its notes warn that putting SNW Pike, Pelia, Sam Kirk, James Kirk, or T’Pring on the ship causes Replicant hostiles to gain a massive amount of Apex Barrier. The same notes say SNW officers work as usual against V’ger Fighter Hostiles, so that statement should not be generalized to the Gorn Hunter encounter. Update 86 provides the warning but does not name a best V’ger Gorn countercrew. Update 86 notes.

What Gorn Hunter rewards are used for
According to the Help Center, destroyed Gorn Hunters release Volatile Isomatter, which can be traded at the Isolytic Refinery for officer shards, artifact pieces, and grade-upgrade materials. The Help Center places the new Isolytic hostiles in G4, G5, and G6 systems in Gorn Space. Gorn Hunter Help Center article.
