What Is Horchata? Ingredients, Caffeine, Allergens, and Nutrition

Horchata is a family of sweet, usually chilled beverages—not one standardized recipe. Spanish horchata de chufa is made from tigernuts, while Mexican-style horchata commonly starts with rice and cinnamon. Other Latin American versions may use almonds or other seeds and nuts, dairy milk, or plant-based milk. Because the base and sweetener change, there is no single answer for horchata’s caffeine, allergen, calorie, or sugar content.

The safest way to judge a glass, bottle, concentrate, or café drink is to identify its base, check whether milk or nuts are included, note the serving size, and read the added-sugar and ingredient information.

What is horchata?

Horchata is the shared name for several traditional drinks prepared by soaking, blending, straining, and sweetening a grain, nut, seed, or tuber-like ingredient. The name describes a beverage family rather than a fixed formula. Recipes differ by country, region, restaurant, and manufacturer.

Spanish horchata de chufa

Spain’s horchata de chufa is the distinct tigernut-based tradition recognized by the country’s official horchata de chufa regulation. Tigernuts are not tree nuts; they are small tubers used to make a milky-looking drink. Spanish horchata therefore has a different base from the rice drink commonly served in Mexico and elsewhere in Latin America.

Mexican-style and other Latin American horchatas

Mexican-style horchata commonly uses white rice, water, cinnamon, and sugar. Some recipes add almonds, and others include milk or a plant-based milk. Across Latin America, versions may use seeds, nuts, spices, dairy, or plant ingredients in different combinations. A restaurant’s “horchata” can therefore be quite different from a shelf-stable rice beverage or a powdered mix.

Horchata style or format Typical base Dairy status Key allergen questions Caffeine expectation
Spanish horchata de chufa Tigernuts Recipe-dependent; check preparation Check the full ingredient list and shared-equipment practices Usually caffeine-free unless another caffeinated ingredient is added
Mexican-style rice horchata Rice, water, cinnamon, sugar May be dairy-free or made with milk Some recipes add almonds; check for milk and nuts Usually caffeine-free
Restaurant or café variation House recipe, syrup, concentrate, or blended mix Varies by recipe Ask about ingredients and cross-contact Depends on whether coffee, tea, or another stimulant is included
Bottled, refrigerated, shelf-stable, or powdered product Manufacturer’s formula Read the package Use the regulated allergen statement and complete ingredient list Read the ingredient list; flavor name alone is not enough

What is horchata made of?

A representative USDA/MyPlate rice-horchata recipe uses white long-grain rice, water, 1% milk, vanilla extract, ground cinnamon, and sugar. The rice provides the starchy base; cinnamon and vanilla supply flavor; sugar sweetens the drink; and milk gives the example recipe a dairy component. A different recipe can omit milk, replace it with plant-based milk, or add almonds.

How the rice-based method works

  1. Blend the rice and water. The rice is broken down in water to release starch and flavor.
  2. Let the mixture stand. Resting gives the rice time to soften and allows more of its flavor and starch to move into the liquid.
  3. Strain the liquid. A fine straining step removes the larger rice particles, leaving a smoother drink.
  4. Add the remaining ingredients. The USDA example then incorporates 1% milk, vanilla extract, cinnamon, and sugar.
  5. Chill and serve over ice. The finished beverage is served cold.

The published ingredient list does not make every horchata interchangeable. If a recipe uses almonds, it introduces a tree-nut question that a plain rice-and-cinnamon recipe may not have. If it uses milk, it is no longer automatically dairy-free. If it uses a flavored coffee syrup or is blended with coffee, its caffeine status changes.

Other ingredients you may encounter

  • Almonds: Some Mexican-style recipes include them for body and flavor; the UC San Diego agua de horchata ingredient listing also includes almonds.
  • Milk: Cow’s milk appears in the USDA example, while other recipes use water alone or a plant-based milk.
  • Plant-based milk: This can remove intentional dairy from a formula but may introduce soy or another allergen, depending on the product.
  • Cinnamon and sugar: They are common, but the amounts vary substantially between recipes and products.
  • Powdered mix or concentrate: These formats are documented for horchata and may contain sweeteners, milk ingredients, nuts, or flavorings that are not obvious from the word “horchata.”

Does horchata have caffeine?

Traditional rice-and-cinnamon horchata is usually caffeine-free. Its usual ingredients do not include coffee, tea, or another caffeinated ingredient. A USDA FoodData Central-linked restaurant nutrition record lists caffeine as absent or not reported for horchata.

“Usually” matters. A café can use horchata syrup or flavoring in a coffee drink. For example, a Starbucks horchata frappuccino listing includes coffee, so that beverage should not be treated as ordinary caffeine-free horchata. A bottled product could also add coffee, tea, cocoa, or a caffeinated flavor component.

When caffeine matters—because of pregnancy, medication, sensitivity, or a child’s drink—ask whether the beverage contains coffee or tea and read the package’s ingredient and nutrition information. The name “horchata” by itself does not guarantee zero caffeine.

Is horchata dairy-free?

Horchata can be dairy-free, but it is not automatically dairy-free. The USDA/MyPlate example contains 1% milk. Other rice horchatas use only rice, water, cinnamon, and sugar, or substitute a plant-based milk. A tigernut-based horchata may also be made without dairy, but the particular recipe or commercial formulation controls the answer.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

For a restaurant order, ask whether the base contains milk, condensed milk, evaporated milk, cream, or milk powder. Also ask whether the same blender, pitcher, ladle, or storage container is used for dairy and non-dairy drinks. A recipe can be dairy-free by ingredients while still presenting a cross-contact concern in a shared preparation area.

For a packaged drink or powder, look for “milk” in the ingredient list and the required allergen declaration. Do not infer dairy-free status from a plant-sounding name, a white color, or the absence of an obvious milk ingredient in the product title.

Does horchata contain almonds or other allergens?

Some horchata contains almonds. Almonds appear in certain Mexican-style recipes and in the UC San Diego agua de horchata ingredient listing. Other versions are made without tree nuts, but the name alone cannot establish that a drink is nut-free.

In the United States, the FDA identifies nine major food allergens: milk, eggs, fish, crustacean shellfish, tree nuts, peanuts, wheat, soybeans, and sesame. Packaged foods must identify the food source of a major allergen when it is used as an ingredient. Read both the allergen statement and the complete ingredient list, because the latter can reveal ingredients and flavorings that matter to your specific allergy.

Questions to ask at a restaurant or café

  • Is the horchata made with almonds, another tree nut, or a nut-containing mix?
  • Does it contain cow’s milk, condensed milk, milk powder, or a plant milk such as soy milk?
  • Is the same blender or serving equipment used for nut, dairy, or other allergen-containing drinks?
  • Is the recipe a house preparation, a concentrate, or a packaged powder, and can staff show the current ingredient information?

No restaurant or packaged horchata should be described as allergen-free without checking its current formulation and preparation controls. “May contain” or shared-equipment language signals a separate cross-contact issue from ingredients intentionally included in the recipe.

How many calories and how much sugar are in horchata?

There is no universal nutrition panel for horchata. Calories and sugar change with the amount of sweetener, whether milk or nuts are used, how much sediment is strained out, the recipe’s serving size, and whether the drink is homemade, restaurant-served, or commercially packaged.

Source and product description Serving basis Calories Carbohydrate Sugars Fat Protein
USDA FoodData Central-linked restaurant horchata record, accessed 2026 100 g 54 kcal 11.52 g Not stated 0.71 g 0.48 g
UC San Diego Housing Dining Hospitality Services agua de horchata listing, accessed 2026 16 fl oz 125 calories 28 g 17.1 g 1.9 g 2 g
USDA FoodData Central record for Tropi Fresh horchata rice-milk drink, 2021 record update 250 mL 180 calories Not stated 25 g Not stated Not stated

These figures are examples from different products and serving bases, not a range that every horchata falls into. The 100-gram record cannot be compared directly with a 16-fluid-ounce serving without converting the portions, and a 250-milliliter packaged drink may differ from a restaurant cup even when both are called horchata.

How to compare labels fairly

  1. Match the serving size. Compare the same volume or weight before comparing calorie or sugar numbers.
  2. Check added sugar. Sweetened rice drinks can vary greatly depending on sugar or syrup; an “unsweetened” description should still be confirmed on the label.
  3. Look at the base. Milk and nuts can change fat and protein, while a rice-heavy drink may contribute more carbohydrate.
  4. Account for the format. A concentrate, powder, or café drink may be mixed with additional milk, syrup, or coffee.

Is horchata healthy?

Horchata is best evaluated as a sweet beverage whose nutritional profile depends on its recipe, not as a single inherently healthy or unhealthy food. Rice, tigernuts, almonds, milk, or plant-based ingredients can contribute different nutrients, but added sugar can also make a serving substantially more caloric. The three documented examples above show why a product label or recipe is more informative than the drink’s name.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

For an occasional drink, focus on the portion and the formulation. If you want less sugar, choose a smaller serving or an unsweetened or less-sweet version when one is available, then verify the nutrition panel rather than relying on the menu description. If you need more protein or are avoiding dairy, compare the ingredient and nutrition information for milk-based and plant-based versions. These choices are personal nutrition decisions; “horchata” alone does not establish a health benefit.

How to choose horchata safely

Use this checklist when buying, ordering, or preparing it:

  • Identify the style: rice, tigernut, seed, nut, or a blend.
  • Confirm dairy: ask whether milk or milk-derived ingredients are included.
  • Check nuts: look specifically for almonds and other tree nuts.
  • Read the label: packaged products should declare the FDA-recognized major allergens used as ingredients.
  • Ask about cross-contact: especially when ordering from a shared blender or beverage station.
  • Verify caffeine: plain horchata is usually caffeine-free, but coffee-containing café versions are not.
  • Compare serving sizes: use calories, carbohydrate, sugar, fat, and protein numbers only after matching portions.
  • Consider the format: homemade, restaurant-served, refrigerated, shelf-stable, and powdered products can have different formulas.

Bottom line for common horchata questions

Horchata is a category of sweet drinks, not one recipe. Mexican-style rice horchata is commonly caffeine-free and may be dairy-free, but milk and almonds are frequent variables. Spanish horchata de chufa uses tigernuts instead of rice. Calories and sugar depend on the serving and formulation, with documented examples ranging from 54 kcal per 100 g to 180 calories per 250 mL. Read the ingredients, allergen statement, serving size, and caffeine information for the exact horchata you plan to drink.
