Neither form of Giratina is better in every situation. Altered Forme is the bulkier, defensive choice. Origin Forme trades that bulk for stronger offense and gets Levitate, a useful ability that Altered Forme does not have. Which one fits depends on your role on the team, the game you are playing, and whether you can access the form you want in that game.
The short answer by role
If you want a Giratina that absorbs hits and stays in longer, Altered Forme is the stronger pick. If you want a Giratina that hits harder and benefits from Levitate, Origin Forme is the one to choose. Both forms share the same typing, the same HP and Speed, and the same total base stats, so the decision comes down to how the stats are split and what the ability does for you.
Base stats side by side
Both forms are Ghost/Dragon and have a base-stat total of 680. The two forms do not add power overall. They trade points between defensive and offensive stats, so one form gains exactly what the other gives up.

These values come from Serebii’s Scarlet and Violet Pokédex reference. Bulbapedia’s form history describes the same pattern: the defensive stats swap with the corresponding offensive stats, and the total does not change.

What Altered Forme gains
Altered Forme has 120 Defense and 120 Special Defense, compared with 100 in each for Origin Forme. Against physical attackers it takes less damage from hits that target its Defense, and against special attackers the same applies to its Special Defense. That makes it the more durable form when it is meant to wall or absorb a hit before acting.
What Origin Forme gains
Origin Forme has 120 Attack and 120 Special Attack, compared with 100 in each for Altered Forme. Its moves hit harder on both sides of the physical and special split, which is the main reason to choose it when Giratina is the team’s damage source rather than its wall.

Abilities: Pressure versus Levitate
The two forms do not share an ability. The cited game reference lists Pressure for Altered Forme and Levitate for Origin Forme. The official Pokémon Pokédex entry lists Levitate for Origin Forme.
Altered Forme and Pressure
Pressure makes opposing Pokémon spend extra Power Points when they use moves against Giratina. It rewards a bulky Giratina that stays on the field and forces the opponent to use up its moves faster.

Origin Forme and Levitate
Levitate gives a Ground-type immunity in standard mechanics, so Origin Forme takes no damage from Ground-type moves. Whether this matters depends on the matchup and on the game you are playing. If your team faces many Ground-type attacks, the immunity is a practical advantage. If it rarely does, the offensive stats are more important.

Access is game-specific, and this can decide the question before stats do.

Diamond and Pearl and Altered Forme
Bulbapedia’s form history states that Altered Forme appeared in Diamond and Pearl. It is the form Giratina takes by default in the games where it first appeared.
Platinum and Origin Forme
Origin Forme was introduced in Pokémon Platinum. Its availability in later games depends on the specific title.

Scarlet and Violet and the Griseous Core
In Pokémon Scarlet and Violet, holding the Griseous Core changes Giratina into Origin Forme. If you want Origin Forme in those games, you need the Griseous Core, and you need to equip it on Giratina. Check the item’s availability and any story requirement in your version of the game before planning a team around it.

- Choose Altered Forme if Giratina should absorb hits, stay on the field longer, or act as a physical or special wall.
- Choose Origin Forme if Giratina should be your main attacker and you expect Ground-type moves that Levitate can block.
- Choose by game if you cannot easily get the Griseous Core, since Altered Forme is the form that does not depend on it in Scarlet and Violet.
